In New Zealand’s Central Otago wine region, Wine Spectator Award of Excellence winner True South Dining Room highlights local wine labels but also offers a range of styles from around the globe. General manager and wine director Mark Rose primarily focuses on New Zealand wines, which make up about 70 percent of the 465 selections; local wineries such as Felton Road and Quartz Reef are well-represented. The program also excels in Bordeaux and Burgundy, with prized bottles from producers such as Pétrus and Château Lafite Rothschild. The local focus is also reflected in chef Ben Batterbury’s monthly menus that showcase New Zealand cuisine with ingredients from nearby suppliers. The restaurant is in the Rees Hotel, which offers a variety of luxury accommodations from hotel rooms to lakeside residences. From the wine lounge in the upstairs lobby, guests can peek at some of the restaurant’s nearly 4,000 bottles.
