When it comes to sourcing global selections, head sommelier Marcus Radny generally restricts himself to vineyards that are the same size or smaller than Willow Creek Vineyard, which is 27 acres, though he does make exceptions for rare labels. Like the wines, the five-course tasting menu for $80 celebrates the region, offering an array of local specialties. Chef Martin Webster changes the menu every two weeks, and the wine pairings—which cost an additional $146—change with it, creating a hyper-seasonal experience.
