Located in a building that housed one of the original Coca-Cola bottling plants, Easy Bistro & Bar in downtown Chattanooga, Tenn., offers a relaxed yet refined atmosphere, with a killer wine list to match. For over a decade, co-owner and chef Erik Niel, a recent James Beard semifinalist, has been serving Southern farm-to-table cuisine with a classic French bistro flair, all infused with the Creole flavors of his native New Orleans. The menu presents a succession of dishes arranged by portion size, such as cornbread with sorghum butter, chilled strawberry soup, P.E.I. mussels, and trout almondine. Curated by Niel, the 250-selection, Award of Excellence–winning wine list focuses on California and France, but also offers several choice bottles from Oregon, with more than a dozen options available by the glass in pours of 3 or 5 ounces.
