Taleggio has a very cheesy, even farmyard-like aroma and melts in the mouth as soon as you eat it. The taste is like raisins and nuts, and lightly salty.

Wine: Big Italian reds: Barolo, Barbaresco, Chianti Riserva, Taurasi, Salice Salentino; Recioto di Soave
