Ricotta is technically a dairy by-product and not a cheese. Made from the whey that is left over after the curds are separated for the production of other cheese, Ricotta literally means "recooked" in Italian. It is originally from Rome, made from the whey used for Romano. It has a mild, nutty taste and a dry texture.
