Most likely due to the salty soil of the Cheshire plain, this cheese has mild hints of savory salt on the palate. The farmhouse versions have a cloth-wrapped rind while the paste can be either orange or white, depending on whether or not it is dyed.

Wine: light, fruity reds or whites: Meursault, Beaujolais
