A smooth, beige rind covers this fondue-friendly cheese. The dark yellow rind covers a smooth but firm paste. It has darkly-rich and fruity flavors, specifically nuts, caramel, and toffy. Aged six months to two years, this is France's answer to Gruyère.

Wine: All big reds: Côtes-du-Rhône; Chateauneuf-du-Pape; lightly-oaked Chardonnay
