Asiago has a beige exterior rind with an even distribution of holes throughout the yellow-gray interior. It is commonly aged from three to nine months gaining sharp, tangy taste qualities with time.

Wine: Chardonnay; Nebbiolo; light fruity reds: Dolcetto, Grave del Friuli.
