1. Preheat oven to 400° F and bake potatoes for about 1 hour, until fully cooked. Cool until easily handled but still warm, about 15 minutes. Remove potato meat from the skin and place in a large bowl.
2. Add powdered gelatin and Tater Tot Seasoning to potato and mix well with hands, breaking up chunks of potato but being careful not to let the mixture get gummy.
3. Preheat oil to 350° F, just enough for tots to float. Mold potato mixture into quarter-sized balls or form into tot shape. Dust in potato starch and fry at 350° F until golden and crisp.
Combine and mix all ingredients in food processor.
