Remove the Foil Capsule
To open a bottle, begin by removing the foil capsule.

1. Place the bottle on a table.

2. With a foil cutter, a small knife or the sharp end of a corkscrew, cut around the capsule just under the lip of the bottle.

3. Lift off the top of the capsule. If the capsule is loose or unattractive, simply remove it all by cutting down the side of the capsule. Be careful; some capsules have sharp edges.

4. Wipe off the cork to remove any residue. It is neither unusual nor an ill omen to find a hint of mold between the cork and the capsule, especially if the wine has been stored in...
