As chef-owner of the Washington, D.C., restaurant Centrolina, a winner of Wine Spectator's 2018 Award of Excellence, Amy Brandwein serves what she calls "a lighter refresh of your typical lamb chops"—marinated in herbs, grilled individually scottadito-style, and served with roasted artichokes and a delicate honey lavender sauce that's simple to make.
