White wine with fish, red wine with meat, served as the training wheels for a society less sure of where wine fit in with dining. Considering how we eat, not to mention what we eat, if we drank wine only when seated for dinner, most of us would barely finish a glass in today's abbreviated 15-minute, on-the-run mealtime. Wine in America has become a recreational beverage.
