Cavas range from simple sippers to wines of complex character

Most of Spain's sparkling wines originate from the Cava region in Catalonia, whose Mediterranean climate and clay- and limestone-based soils produce round, fruit-forward sparkling wines, with apple, melon, spice and earthy smoke notes. The wines show lively, balancing acidity thanks to higher-elevation vineyard sites and/or the inclusion of naturally higher-acid grape varieties in the blend.
