On the Dommel river in Eindhoven, Netherlands, Zarzo is an inherently wine-centric spot serving contemporary European cuisine. Wine is a cornerstone of the concept thanks to its namesake chef-owner, Adrian Zarzo, who’s also the wine director. Hailing from Valencia, Spain, Zarzo gravitates toward Spanish labels on the Wine Spectator Best of Award of Excellence–winning list. That means an abundance of gems from Ribera del Duero, including a 22-vintage vertical of Bodegas Vega Sicilia Ribera del Duero Unico, and more than two dozen Sherries. Though as the restaurant evolves, Zarzo increasingly rounds out Spain with classic regions around the globe. There are outstanding picks in France, particularly Burgundy and Bordeaux, as well as Italy, Australia and Germany. An impressive 65 wines are available by the glass, plus an ever-changing selection of pours via Coravin and another 15 to 20 wines offered as pairings. The ambitious program offers 1,600 selections, and Zarzo plans to expand that to 1,800 selections by the end of 2019 and 2,000 selections by the end of 2020. In the kitchen, he crafts creative, modern dishes with significant Spanish influence, listed on the menu with whimsically simplistic descriptions like “Tuna, Rose, Feta” and “Short Rib, Gremolata, Shallots.”
