Vilu Restaurant showcases a Wine Spectator Best of Award of Excellence–winning program in a pristine setting. Surrounded by sparkling turquoise waters and white-sand beaches, the restaurant is one of several at Conrad Maldives Rangali Island, a luxury resort spread across two private islands. The open-air eatery runs alongside a lagoon and serves a modern Mediterranean menu by chef Shannon Batten, with plenty of seafood plates like pistachio- and coriander–crusted scallops and calamari fried in saffron batter. Head sommelier Rakesh Shetty’s wine program comprises 850 international selections with highlights in France (especially Champagne), Italy, Australia and California. The list is organized by grape variety and includes helpful blurbs throughout to help guests make informed choices, though it’s hard to go wrong here. In each region, Shetty aims for a mix of classics, up-and-comers and cult favorites. For those looking to dive deeper into the offerings, Vilu Restaurant hosts biweekly wine dinners in the underground 12,000-bottle cellar.
