Founded by owners Brian and Grace Koo, Maum (the restaurant takes its name from a Korean philosophy which the Koos translate as "from the heart") highlights local ingredients to bring the authentic flavors of the Korean peninsula to Northern California. Meals here are communal, with a singular, long fir table seating up to 16 diners, and a maximum of six guests per party. Wine director Jose Maria Aguirre oversees the nearly 300-selection wine list, which is evenly divided between reds and whites.

Strong selections of Champagne, Burgundy, Bordeaux and California offer a counterpoint to chefs Meichih and Michael Kim's modern Korean cuisine. Maum offers just one or two seatings per night for its tasting menu ($195–$225), with wine pairings available for an additional $100.
