Ka'ana Kitchen is a Wine Spectator Award of Excellence winner in Andaz Maui at Wailea Resort, a luxurious property set on 15 beachfront acres in Maui, Hawaii. Wine director Charlie Seibert’s program emphasizes wines from France and California, organized under helpful headlines such as “clean, minerally, white” and “intense, full, red.” Though it’s relatively concise with 180 selections, the list offers an impressive two dozen wines by the glass and 15 in half-bottle. A handful of the by-the-glass picks are poured via Coravin, featuring coveted names like Domaine de Montille and Shafer. Chef Isaac Bancaco works with local purveyors to source ingredients for his regional cuisine. The dishes combine fresh and indulgent elements, like a starter of ahi tuna with bacon jam and an entrée of Wagyu strip loin with carrot and ginger. In addition to a six-course chef’s tasting, there’s also a “mini chef’s tasting,” where guests can choose three courses for $85 per person, with wine pairings for an additional $45.
