In the Rosewood London hotel, Holborn Dining Room offers a mix of traditional British style and contemporary culinary values, plus a list of top international wines. The dynamic brasserie includes a Gin Bar, which claims to hold the city’s largest gin collection, the Pie Room, a refined pastry boutique, and an all-day restaurant. There, chef Calum Franklin uses local ingredients for regional dishes like Scotch egg, smoked haddock and various savory pies. The dining room juxtaposes old and new, with antique mirrors and reclaimed oak furnishings alongside red-leather banquettes and impressive chandeliers. There’s also the Terrace, a restaurant in the hotel’s inner courtyard with a seasonally rotating concept. Guests can experience the 500-label, Wine Spectator Best of Award of Excellence–winning list in both the Terrace and the main dining room. Overseen by sommelier Michael Raebel, the wine program emphasizes France but increasingly represents regions around the world. Raebel grew selections by 100 in the past year, bolstering the Italian collection and adding more high-end wines from producers like Emidio Pepe and Joseph Phelps.
