“I’m still learning,” says Laura Diaz, who has a calm air about her. “And one of the things I’m learning is, sometimes it’s better to wait.” Diaz, a Madrid native, came to the U.S. in 2007 as an intern and went on to work 10 years with winemaker Chris Carpenter at Lokoya, specializing in Napa Cabernets from mountain AVAs.
