For most of the past century, the Languedoc region in France mainly produced low quality bulk wines sold as supermarket brands. Ambitious producers working in distinctive terroirs were few and far between. But that is changing. An important step has been to define and regulate the region's wine production within the Appellation d'Origine Contrôlée system. The change has delimited subregions, meant to encourage producers to aim for higher quality and to help consumers identify the region's better, more distinctive wines. Wine Spectator's Gillian Sciaretta explains.
