Dear Dr. Vinny,
I just purchased a new wine cooler. What temperature should I keep the cooler at for my collection of Cabernets?
—Jim Vinette, Deerfield Beach, Fla.
Dear Jim,
Cellar temperature should be maintained at 55° F, with 70 percent humidity and a 10 percent chance of rain. (Just kidding about the rain.) Make sure that wine is stored away from light and vibrations, which can prematurely age wine, just like tanning booths and mechanical bulls can prematurely age people.
