Naples, Fla. diners are lucky—Jacques Cariot likes a lot of wines and has excellent taste. In the 16 years since he and his wife, Lysielle, opened Bleu Provence, the wine program has grown to some 2,000 selections and 30,000 bottles. Wine Spectator's Mitch Frank explains.
