Hervé Mons sells 200 cheeses from across a wide swath of southern France, starting in the Basque region of Pyrénées-Atlantiques, sweeping east and north through the Midi, the Auvergne and Provence to the Auvergne-Rhône-Alpes by the Swiss border. If the aim is to disseminate a fastidiously assembled selection of their country's best traditional, regional cheeses, then Hervé Mons and his team are squarely on target.
