Marin County's Niman Ranch, widely admired for its premium beef and pork, also makes fresh-tasting, herbaceous pork "Provence" sausage ($8.50 for a pound) and succulent applewood smoked ham (a 12-pound ham costs $129 and feeds 20 or more; halves are $69). Their products are organic and from free-range, humanely raised animals, and are far superior to mass-produced versions. Restaurant Lulu's Meyer lemon and caramelized onion marmalade ($9 for an 8-ounce jar), best used as chutney, provides a nice counter-point to these robust meats.
