In 1998, Wine Spectator reviewed 43 rosé Champagnes; this year I will taste 63, an increase of nearly 50 percent. That's because Americans have taken a liking to pink fizz. Not only do rosés add a splash of color, they are just as versatile at the table when it comes to matching with food.
