Jade Dragon offers authentic Cantonese cuisine inside City of Dreams in Macau, China, a massive resort with four hotels, a casino and various entertainment venues. The Wine Spectator Best of Award of Excellence winner offers an 800-selection wine list overseen by wine director João De Melo Pires, with 10,000 bottles in inventory. Highlights include wines from Italy and Portugal, but France is the dominant region in the program, with strengths in the Rhône Valley and Bordeaux. The latter section is especially strong, with exceptional verticals like a 65-vintage lineup of Château Mouton-Rothschild going back to 1945. In the kitchen, chef Tam Kwok Fung cooks familiar dishes like scallops with X.O. sauce and more adventurous options like suckling pig barbecued with lychee wood.
