Amid the sprawling 22-acre Hilton Hawaiian Village resort in Honolulu is Award of Excellence winner Fresco Italian Restaurant. The wine list focuses on Italy and California, with values from big names such as Ruffino and Duckhorn. General manager Jay Sakai helps guide guests through the 110 selections with a page of “Fresco’s Wine Picks” to highlight his favorites. Sakai says he built the program around the menu, which takes classic Italian dishes and infuses them with the fresh local ingredients. Hawaiian black salt tops the caprese, and kukui nuts are stirred into pasta dishes; some signature dishes get a larger dose of island flair, like risotto with Kahuku sweet corn, seared scallops and tobiko caviar.
