Charles Smith managed rock bands in Europe for 11 years, and he looks the part, wearing an old T-shirt with a death's-head on it, his frizzy hair sticking out in several directions. Yet living in Denmark, where he developed a taste for fine wine, eventually led him to a new life in a farmhouse just east of Walla Walla, Washington.
