Stilton is a cow's milk blue cheese named for a wee central England village. After getting past the dry and brownish (and usually inedible) rind, a moist cheese enfolds. Stilton is known for its tremendously rich flavor and spicy aroma.

All Stilton is made from pasteurized milk.

Wine: white Burgundy, Chardonnay
