This French-Basque cheese has a nutty, olivey, and almost wine-like smell. The interior is ivory colored and the inedible rind is grayish brown. On the palate Ossau is tangy, salty, fruity and noticeably spicy.

Wine: Pinot Noir/Cahors/red Burgundy; Rhône reds; Madiran
