Cheese: Ossau Iraty
Region: Southwest France
This French-Basque cheese has a nutty, olivey, and almost wine-like smell. The interior is ivory colored and the inedible rind is grayish brown. On the palate Ossau is tangy, salty, fruity and noticeably spicy.
