Milk: Buffalo or Cow
Real Mozzarela is from Buffalo's milk. There is also mozzarella being made out of cow's milk today but the differences are usually obvious: Buffalo-milk mozzarella is softer, less rubbery and more flavorful. All mozarrella is white with a thin, shiny skin and should be stored in bowls or sealed bags of whey.
