Manchego usually has a black or gray rind with a cross-hatched pattern that covers a sweet and mild paste with touches of salt and nuts.

Wine: Young: fino Sherry, fruity Spanish reds or a sparkling Catalonian white; Aged: big Rioja, Pendes, or Ribera; Champagne
