A wonderfully smelly cheese, Livarot is covered with an orange rind and usually more than one wrap to stop it from bulging (and to tame its aromatic presence). The paste is springy and tastes salty with hints of nuts, beef, and bacon.

Wine: Big reds: Portugese Garrafeira, Bordeaux, Burgundy
