A gray exterior and snow-white paste mark this hard-to-find farmhouse treasure. It can be aged from three to six months, as the paste darkens. The texture is firm and crumbly while the flavors that emerge are deliciously tangy and milky.

Lancashire is an excellent melting cheese or on a sandwhich.

Wine: Chardonnay; Muscadet; Pinot Noir, red burgundy
