Explorateur

Cheese: Explorateur
Region: France
Milk: Cow (with cream)

This triple cream cheese was invented in 1958, just about the same time that the rocket Explorer was all over the news. Triple cream cheese is defined as a cheese with 75% or more butterfat content. This is produced by adding lots of cream to the milk before coagulation.

The rind is bloomy and white -- almost Brie-like -- with a creamy soft bone-colored paste inside. Explorateur cheese generally has a very rich and very big flavor.

Wine: Champagne; Chardonnay
