Also known as "Emmenthaler", this is the famously original -- and often imitated -- "Swiss" cheese. It is also one of the largest produced cheeses in the world, requiring over 264 gallons of milk for one typical 42 inch diameter cheese wheel. There is a smooth, pale yellow rind and a beige-yellow interior. Lots of randomly placed walnut-sized holes with a similarly nutty flavor!
