Canlis Tater Tots

Canlis Tater Tots

  • 1 1/2 cups Idaho potato, baked and removed from skin
  • 3/4 teaspoon powdered gelatin
  • 1 Teaspoon Tater Tot Seasoning (see recipe below)
  • Canola or corn oil for frying
  • 1/4 cup potato starch

1. Preheat oven to 400° F and bake potatoes for about 1 hour, until fully cooked. Cool until easily handled but still warm, about 15 minutes. Remove potato meat from the skin and place in a large bowl.

2. Add powdered gelatin and Tater Tot Seasoning to potato and mix well with hands, breaking up chunks of potato but being careful not to let the mixture get gummy.

3. Preheat oil to 350° F, just enough for tots to float. Mold potato mixture into quarter-sized balls or form into tot shape. Dust in potato starch and fry at 350° F until golden and crisp.

Tater Tot Seasoning

  • 5 tablespoons Spanish paprika
  • 1/4 teaspoon espelette chile powder
  • 5 teaspoons fennel
  • 4 tablespoons celery salt
  • 2 bay leaves
  • 2 tablespoons garlic powder
  • 1 tablespoon + 1 1/2 teaspoons onion powder
  • 3 tablespoons + 1 teaspoon salt

Combine and mix all ingredients in food processor.
