Riesling is an adaptable grape, but it prefers cool climates and mineral-rich soil. These grapes can show intense flavors even when slightly under ripe, making this variety ideal for northern areas. Cool weather brings out its acidity, while in warmer climates it makes a less acidic, softer, rounder wine.
