Capezzana Vin Santo Del Carmignano Riserva 1996 90 Points, $26/375ml Technique: Dried Grapes Italy's "holy wine," vin santo is a classic dried grape wine. It comes in many styles, from dry to sweet. Trebbiano and Malvasia are the primary grapes used, although it is so much an artisanal wine -- made for centuries in wineries in many different regions -- that other grape varieties often come into the mix.
