Gabriel Viti, chef and owner of Gabriels Restaurant in the Chicago suburb of Highwood, has assembled a 600-selection, 6,200-bottle cellar of mostly French and California wines. Gabriels wine list won Wine Spectators Best of Award of Excellence in 2001, and now Viti has opened Gabriels Wine Shop less than a block away from his restaurant.
