September 30, 1996 Restaurant Alain Ducasse Opens With Fanfare in Paris Gunning for an unprecedented six Michelin stars, Alain Ducasse, chef of the three-star Restaurant Louis XV in Monaco, opened his eponymous restaurant in Paris' Hotel Le Parc in mid-August, where three-star chef Joël Robuchon had ruled until his retirement in July.
