Over the past few years, a new trend has emerged in restaurant wine programs. A growing number are expanding their selections beyond the familiar regions of the wine world. Obscure or hard-to-find varieties, appellations and producers are earning the spotlight. Wines by the glass are no longer captive to large brands. The overlooked is valued, and diversity reigns.
