We decided it was time to explore sushi culture more deeply. So we sent editor at large Harvey Steiman to Japan, to meet Ono and visit some of Tokyo's best sushi restaurants. An experienced food editor and cookbook writer, Steiman was already well-versed in Japanese cuisine. Wine Spectator's publisher Marvin R. Shanken and executive editor Tom Matthews explain.
