
La Colombe Torrefaction of Philadelphia, a roaster founded, owned and operated by Todd Carmichael and Jean Philippe Iberti. They met in Washington state and fantasized about starting their own coffee company. In 1994, they did, choosing Philadelphia as a promising base and naming their business La Colombe (French for "dove") after a favorite café in France. Wine Spectator's Mark Pendergrast explains.
