
At Inn by the Sea, south of Portland, chef Mitchell Kaldrovich began to apply the lessons of his formal training, his international experience and his childhood to the new menu. In this lobster dish shared with Wine Spectator, he deftly weaves together different strands of his life: "The dish bridges the gnocchi from my grandmother—I still have her wooden pasta-roller—with Maine and lobster, and the beurre monté is my background, classical French."
