
Bobby Stuckey, co-owner and general manager with chef Lachlan Mackinnon-Patterson hatched a plan to open their own place, featuring the cuisine of Friuli-Venezia-Giulia, in the relatively small market of Boulder, CO. And though they had their reasons, hindsight is telling. As Stuckey says, "We were crazy naive." For this recipe shared with Wine Spectator, Mackinnon-Patterson wanted homey preparation and flavors.
