
More than many French-born chefs plying their trade in the United States, superchef Hubert Keller, 57, has embraced cuisines from other parts of the world. "When I left France [in 1979] I was only thinking one way, the French way," he says. "But then I went to São Paulo and I had to make adjustments. I learned Portuguese and found out that the French way wasn't the only way. Brazil was the best learning experience for me." Wine Spectator's Sam Gugino explains.
