
On the day RN74 opened in San Francisco's South of Market in April 2009, Rajat Parr was worried. His partners-chef and restaurateur Michael Mina and wine collector Wilf Jaeger-had sunk millions into bringing his personal idea to life: a restaurant serving great wines in proper glasses, decanting as needed, but doing everything possible to avoid the pretensions.
