It caught my eye, as it did so many others. Grant Achatz, the much-praised chef of Alinea restaurant in Chicago, announced that for his newest restaurant-called Next, and yet to open-he will sell tickets for admission. You will pay more for dining on choice days and times, say, Saturday night at 8 p.m., and less for less sought-after days or times.
