When Rajat Parr, wine director for the Michael Mina Group, works on a new wine list, he approaches it exactly as Mina does when he plans a new restaurant in an unfamiliar city: He scouts successful restaurants nearby to see what works. As a result, Parr's lists balance his palate with local tastes.
